Agar-agar powder (E406) is a natural gelling agent extracted from red seaweed, ideal for all your culinary preparations. Versatile and effective, it also acts as an emulsifier, thickener, and stabiliser, making it perfect for both sweet and savoury recipes.
For best results, use between 0.5% and 1% of the total weight of your preparation. Agar-agar activates with heat: the mixture must be brought to the boil to trigger its gelling effect. It then sets upon cooling, ensuring a firm and stable texture.
Store agar-agar in a dry place and in its sealed packaging to maintain its quality.
