Rich in raspberry, the ruby raspberry icing can also be used in a verrine.
Ingredients: Sugar, water, raspberry pulp 27%, wheat glucose powder, gelling agent: pectin, acidifier: citric acid, natural coloring: E120
Use: Ready to use. Melt at 45-50°C in a bain-marie or in the microwave oven. Spread with a spatula, smoothing with a single movement of the palette or color on the entremets (without frost). Perfectly suitable for freezing and deep freezing. Stable on all types of supports (dome, log, etc.).
Storage: Away from light, heat (10-25°C) and humidity. After opening, keep refrigerated.
