Yellow Pectin is a gelling agent used for fruit jellies, candies with our without fruit pulps.
Yellow Pectin is a slow setting gelling agent, ideal for very sweet and sour preparations. Once the gel is formed, it won't be reversible with heat. You will obtain a firm texture.
Very popular for inserts, pastry toppings with undiluted fruits.
You can use 10 to 12g of yellow pectine per kg. Pre-mix the pectin with some sugar, then disperse in water and stir to avoid lumps.
Ingrédients: gelling pectin E440i, sodium and potassium tartrate E337, dextrose, sodic polyphosphate.
