Sodium Carboxymethyl Cellulose (CMC), also known as cellulose gum or E466, is a food additive used as a binder, thickener, and stabiliser. Plant-based, it is derived from pure cellulose and appears as an off-white, odourless, and tasteless powder.

Properties and Benefits:

  • Insoluble in pure organic solvents
  • Resistant to thermal variations (freezing, sterilisation)
