Tonka beans - 30 g

The tonka bean, native to South America, is a fragrant seed from the Brazilian teak tree (Dipteryx odorata). This small, black, wrinkled, oval-shaped seed is famous for its complex, bewitching aromas, reminiscent of a blend of vanilla, almond, caramel, cinnamon and freshly cut hay.

In gastronomy, tonka bean is used to flavour a variety of dishes, from desserts such as crème brûlée, ice cream and chocolate, to savoury dishes where it adds an exotic touch. A small amount is all it takes to infuse dishes with its intense fragrance.

Tonka beans are often grated or infused into culinary preparations. To release its full aroma, we recommend grating it finely with a grater. A few zests are all you need to flavour a recipe.
